Today we have another potato recipe that’s sure to please. These air fryer baby baked potatoes are simple to prepare but pack a punch in terms of flavor.

They make the ideal appetizer or snack, or serve them as a side dish with almost any of your favorite proteins.

Here’s everything you need to make these air fryer baby potatoes.

After pre-heating your air fryer, place the washed potatoes into the air fryer basket, and cook according to the recipe below.

When your mini potatoes are done cooking, remove them from the air fryer, and split them open. Load them up with any of your favorite toppings, and enjoy!

What kind of potatoes should I use?

Feel free to use use any type of baby/mini or new potatoes you like best. We like red and yellow.

More toppings to try

We topped our air fryer mini potatoes with the basics, sour cream and chives, but here are some other ideas:

  • shredded cheddar cheese
  • salsa – try our fresh salsa recipe
  • guacamole or diced avocado
  • chili – try our hearty chili recipe
  • crumbled bacon or bacon bits
  • diced onion
  • a drizzle of ranch dressing
  • vegan sour cream, vegan butter, and non-dairy cheese

Air Fryer Mini Baked Potatoes

Ingredients

  • 1.5 lbs. Mini Potatoes
  • Cooking Spray
  • Butter
  • Sour Cream
  • Chives
  • Salt
  • Pepper

Instructions

  • Pre-heat air fryer to 350 degrees.
  • Place washed potatoes into the air fryer basket.
  • Lightly spray with cooking spray, and air fry for 20 minutes.
  • Remove from air fryer.
  • Split open.
  • Load with butter, salt, pepper, sour creams, and chives.
