Think about your lunch plate or your dinner plate, or even your brunch bowl. If you’re like most people, what takes center stage and occupies most of the inches on that serveware? It’s likely meat in some form or fashion. But there are signs that may be changing, and that some people may be moving away from a mostly meat diet to one where vegetables, in all their glory, take center stage and occupy most of our meals. 

What’s most lovely about that is that vegetables change with the year. What’s really glorious in summertime, for example, may not be the same as what shines in autumn. There’s a rotating cast of characters that have their own flavors and potential on your plate, in every meal.
