This matcha dalgona latte is dairy-free and made without refined sugar. It’s our take on the dalgona whipped coffee you might have seen on Instagram and TikTok.
Instead of coffee, we’re using matcha powder in this easy recipe.
Inspired by Dalgona Whipped Coffee
Dalgona Whipped Coffee is something that became popular in the U.S. through social media. The concept comes from the popular beverage in South Korea. Traditionally, you’ll find it made with water, instant coffee, and refined sugar. Those three ingredients are whipped together and served over milk.
What is Matcha?
Matcha is finely-ground powder of specially grown and processed green tea leaves. Matcha is not steeped like the tea you’re familiar with, but is instead, whisked into hot water to create a frothy drink.
Matcha powder is also used in baking and smoothies (like this one). It’s high in antioxidants and has about half the amount of caffeine as regular coffee.
We prefer organic matcha. For the best quality, look for matcha that is a bright green in color, rather than a darker “army” green in appearance.
How to Make a Matcha Dalgona Latte (vegan and sugar-free)
We’re sharing our version of the popular dalgona whipped drink. Ours is made with matcha, sweetened naturally, vegan, and is easy-to-make.
Vegan Matcha Dalgona Latte Ingredients
Aquafaba (liquid from a can of chickpeas or the cooking water from chickpeas)
Soy milk
Matcha powder
Agave syrup
Hot water — around 176 degrees F
What is Aquafaba?
A very popular ingredient in vegan cuisine, aquafaba is the thick liquid that is produced after soaking legumes (like chickpeas, beans, lentils etc.) It whips up just like egg whites, so it’s a marvelous vegan substitute.
The first step in this recipe is to filter the aquafaba from a can of chickpeas.
Whip on high until until the aquafaba becomes fluffy and thick, anywhere from five to eight minutes.
In another bowl, combine the matcha and hot water. Note: If the water reaches above 176 degrees F, it will turn the matcha bitter.
When the matcha is completely dissolved, stir in the agave syrup.
Next, very carefully add the matcha mix to the bowl of aquafaba foam, and gently mix with the hand or stand mixer to create your “matcha foam.”
Pour the soy milk into glasses (adding ice if you’d like), and top with the matcha foam. Sprinkle with matcha powder for decoration. Now your matcha dalgona latte is ready to enjoy.

Matcha Dalgona Latte (Vegan)
Ingredients
- 1/4 cup aquafaba liquid from a can of chickpeas or the cooking water from chickpeas
- Soy milk
- 2 tsp matcha powder
- 2 tsp agave syrup
- 2 tbsp hot water โ around 176 degrees F
Instructions
- Filter the aquafaba from a can of chickpeas.
- Add the aquafaba to a stand mixer bowl (or use a hand mixer), and whisk until it becomes fluffy--about five to eight minutes.
- In another bowl, combine the matcha and hot water. Note: If the water reaches above 176 degrees F, it will turn the matcha bitter.
- When the matcha is completely dissolved, mix in the agave syrup.
- Next, very carefully add the matcha mix to the bowl of aquafaba foam, and gently mix with the hand or stand mixer to create your โmatcha foam.โ
- Pour the soy milk into glasses (adding ice if youโd like), and top with the matcha foam. Sprinkle with matcha powder for decoration.
