This is a delicious, and guilt-free, meal everyone will enjoy—vegan or not! And, it’s ready in no time, so it’s perfect for busy weeknight dinners.

Health Benefits of Spinach
We all know spinach is good for you too. It’s loaded with anti-oxidants that can protect against cancers, promote eye health, and fight inflammation, to name just a few of its benefits. And, if you’re a vegan or vegetarian, spinach is a wonderful way to get more iron into your diet.
This avocado and spinach pasta recipe includes walnuts, olive oil, garlic, and other healthy ingredients as well, but best of all, it tastes incredible!
Creamy Avocado Spinach Pasta Recipe
Here’s everything you need to make this avocado spinach pasta.
To start, cook the spinach leaves until they start to soften and shrink up a bit.
Next, place all the ingredients except the pasta, parmesan cheese, and cherry tomatoes in a food processor, and blend until you get a smooth and creamy consistency.
If you’d like more liquid, add a little more oil or lemon juice.
Serve this flavorful sauce with any of your favorite pasta. We like to garnish this creamy avocado spinach pasta dish with parsley, cherry tomatoes, and vegan parmesan cheese. (Of course, dairy parmesan is fine too if you’re not eating vegan.)
What to Serve With Your Spinach Avocado Pasta
- Caesar salad or any favorite salad
- breadsticks (try these)
- garlic bread
- bruschetta
- sauteed zucchini or your favorite veggies
Recipe Tips
- Look for avocados that are very ripe as they will be easier to blend.
- This recipe can be served warm or cold!
Creamy Avocado Spinach Pasta
Ingredients
- 10 oz spaghetti or fettuccine
- 1 clove garlic
- 2 medium ripe avocados
- 1 cup fresh spinach
- ½ cup walnuts
- ¼ cup vegan or dairy/regular parmesan cheese (optional)
- 1 tbsp lemon juice
- ¼ cup olive oil
- ½ tsp salt
- ½ tsp pepper
- ½ cup cherry tomatoes optional
- ¼ cup fresh parsley optional
Instructions
- Slightly cook spinach leaves (in a little olive oil), until they soften a little.
- Place all the ingredients except pasta, parmesan cheese, and cherry tomatoes in a food processor, and blend until you get a smooth and creamy consistency. If you’d like more liquid, add a little more oil or lemon juice.
- Cook your pasta following the package directions.
- Serve this creamy avocado spinach sauce with the pasta of your choice.
- Optional: garnish with cherry tomatoes, fresh parsley, and/or vegan/dairy parmesan cheese.
Notes
