We love Spanish rice at our house, and today, I’m sharing a new way to prepare it. Our Spanish cauliflower rice is the perfect side to any Mexican dish.
Made with riced cauliflower, it’s healthier, gluten-free, and has a fresh, flavorful taste I think you’ll love.

Spanish Cauliflower Rice Recipe Tips
- Short on time? Use already-riced cauliflower. Most grocery stores carry it in the produce or freezer section. Note that this may change the cooking time a bit, and frozen cauliflower may release more water.
- This Spanish cauliflower rice side dish becomes a complete meal with the addition of a protein–think chicken breast, black beans, or whatever you like best.
- If you like your “rice” a little spicier, adjust the spices to your taste.
Spanish Cauliflower Rice
Ingredients
- ½ head of cauliflower pulsed in a food processor until rice-like
- 1 tomato diced (do not drain juice)
- ½ onion diced
- 2 garlic cloves minced
- 1 tablespoon lime juice
- ½ tsp. chili powder
- ½ tsp. chipotle chili pepper powder
- ½ tsp. salt
- dash of cayenne pepper
- ¼ cup cilantro chopped
Instructions
- In a skillet over medium heat, sauté onions and garlic in 1-2 teaspoons olive oil for 2 minutes.
- Add cauliflower until slightly browned.
- Add tomatoes, lime juice, and spices.
- Cook for 5-7 minutes.
- Fold in cilantro.
