Lemon Poppy Seed Waldorf Chicken Salad

Ingredients
- 3 Baked Grilled, or Rotisserie Chicken Breasts Cubed
- 1 Medium Green Apple Diced
- 2-3 Green Onion Stalks Chopped
- 1/4 c. Pecans Chopped
- 1/2 c. Mayonnaise
- 1-1/2 Tbsp. Honey
- 1-1/2 Tbsp. Lemon Juice
- 1 Tbsp. Dijon Mustard
- 1 tsp. Poppy Seeds
- 1/2 tsp. Onion Powder
- Pinch of Salt
Instructions

Mix mayonnaise, honey, lemon juice, Dijon mustard, poppy seeds, onion powder, and salt in a medium mixing bowl, and stir to combine.

Add diced chicken, green apples, pecans, and green onions, and stir to combine.

Serve on rolls or a bed of lettuce.
