Are you eating gluten free? Here’s an easy recipe for gluten-free banana mini muffins.
These are perfect for breakfast or for a snack anytime. Chocolate chips are optional, but I rarely say no to chocolate, so I always put them in.
And, you’ll love how simple these little muffins are to make. There’s no reason not to have these warm, fresh-baked treats anytime. Enjoy!
Gluten-Free Banana Mini Muffins
Ingredients
- 1 medium peeled banana
- 1 tsp baking soda
- pinch of salt
- 1 tbsp vanilla
- 1 egg
- 3 tbsp honey
- 1/2 cup peanut butter
- 1/2 cup mini chocolate chips optional
Instructions
- Place all ingredients except chocolate chips in a food processor, and mix well. You can also use a bowl and hand mixer.
- Fold in half of the chocolate chips, saving the rest for the top of the muffins.
- Pour batter into sprayed mini muffin tins, and then top with the rest of the chocolate chips.
- Bake at 400 degrees for seven to nine minutes.
- Enjoy!
