Vegan Avocado Chocolate Mousse

Vegan Avocado Chocolate Mousse

Servings 2 servings

  • 4 oz dark chocolate chopped into small pieces
  • 2 large ripe avocados
  • 3 tbsp cocoa powder
  • ¼ cup almond milk
  • 1 tsp vanilla extract
  • tsp salt
  • Optional: 1-3 tsp agave nectar, maple syrup, or another liquid sweetener of choice

  1. First, melt the chocolate.
  2. Microwave option: Place the chopped chocolate in a microwave-safe bowl. Put the bowl of chopped chocolate into the microwave for 30 seconds on high power. Remove the bowl from the microwave, and stir the chocolate. Place the bowl back for another 30 seconds on high power. After this, keep microwaving the chocolate chips on high power in 10-second increments, stirring in between until the chocolate is smooth and fully melted.

  3. Stove option (the one I used): To melt chocolate on the stovetop, place the chopped chocolate in the top of a double boiler over barely simmering water. This method keeps the chocolate away from direct heat, which allows it to melt at a low enough temperature to prevent scorching and separating.
  4. In a medium bowl, combine all the ingredients with the melted chocolate, and using a hand blender, pulse until smooth.
  5. For a better consistency, refrigerate for one to two hours before serving.

  6. Optional: garnish with shredded coconut, fruit, or vegan whipped cream.
