Gluten-Free Banana Mini Muffins

Ingredients

  • 1 medium peeled banana
  • 1 tsp baking soda
  • pinch of salt
  • 1 tbsp vanilla
  • 1 egg
  • 3 tbsp honey
  • 1/2 cup peanut butter
  • 1/2 cup mini chocolate chips optional

Instructions

  • Place all ingredients except chocolate chips in a food processor, and mix well. You can also use a bowl and hand mixer.
  • Fold in half of the chocolate chips, saving the rest for the top of the muffins.
  • Pour batter into sprayed mini muffin tins, and then top with the rest of the chocolate chips.
  • Bake at 400 degrees for seven to nine minutes.
  • Enjoy!
