Mix all the ingredients, except bread, in a medium bowl. Whisk to combine.
Dip the bread slices in the mixture, turning to coat both sides evenly. Don’t let the bread soak in the mixture, or it will become soggy and possibly fall apart.
Heat a non-stick skillet over medium heat, and drizzle some cooking oil onto the bottom of the pan.
Cook each piece of coated bread on both sides until browned.
Enjoy your French toast while its still warm. Top with maple syrup and fruit, if desired.
