In a medium mixing bowl, add the nut butter, maple syrup, and vanilla extract. Stir to combine.
Add the oat flour and salt. Stir again until incorporated.
Use a measuring tablespoon to scoop the batter, and roll it into balls. Wet hands to help with this process if necessary.
Add colored sprinkles to a small bowl.
Keep a cup of water nearby to add a little moisture to the outside of the balls before rolling and coating the surface of the balls in the colored sprinkles.
Store in the fridge for up to one week.
