Fiesta Quinoa Salad Recipe (vegan and gluten-free)

Ingredients
3cupscooked quinoa
1cupdiced cucumber
1red bell pepperdiced
1can corndrained
1can black beansdrained and rinsed well
¼cupfresh cilantrochopped
¼cupolive oil
3tablespoonsfresh lime juicecan substitute lemon juice
½teaspoonsaltcan add more to taste
1teaspooncumin
½teaspooncayenne pepper
Instructions
Simply combine all ingredients in a large bowl and mix well to incorporate.
Notes
Salad may be served warm or cold depending on preference.Add some avocado to this dish before serving if you'd like.For meal prep, simply portion the salad into food storage containers and refrigerate for up to five days.
