Vegan Overnight Oats With Chia, Sunflower, & Pumpkin Seeds & Topped With Strawberries

Ingredients

  • ½ cup rolled oats
  • ¼ cup chía seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds
  • 2 tbsp chopped almonds + a few more for topping
  • 1 cup almond milk
  • 2 tbsp maple syrup
  • 2 tbsp peanut butter
  • 1 cup fresh strawberries or your favorite berries

Instructions

  • Place rolled oats, chia seeds, pumpkin seeds, sunflower seeds, almonds, maple syrup, peanut butter and almond milk in a medium jar with a lid. Stir to combine. It’s important to mix well to ensure all of the oats and chia seeds are immersed in the almond milk. Put the lid on the jar, and refrigerate for at least four hours (or overnight).
  • Enjoy with your favorite toppings, such as fresh fruits, chocolate chips, nuts, or maple syrup.
