Here’s a fun fall snack that not only tastes good, but that you’ll love to serve. These mini harvest corn treats would be so cute to serve to the kids on Thanksgiving or to send along to school. With their autumn theme, these treats are perfect for any fall occasion. I love the combination of the sweetness and chocolate with the popcorn too. Enjoy!

Ingredients:

12 cups popcorn (popped)
½ cup – 1 cup Sixlets candy
10 corn husks (usually available at any local grocery store)
½ stick unsalted butter
¼ cup brown sugar
1- 10 oz bag of mini marshmallows
Twine or string

Directions:

  1. Have your 12 cups of popcorn popped and ready to go. You can use microwave popcorn or popcorn popped on the stovetop.
  2. In a saucepan over medium heat, melt butter and brown sugar together. Stir for about three to four minutes until sugar is dissolved.
  3. Add marshmallows to saucepan and stir until melted–about two minutes.
  4. Immediately add popcorn, and mix together.
  5. Add Sixlet candies, and gently mix.mini-harvest-corn
  6. To make the corn shape, it helps to rub a little butter on your hands. This helps prevent the mixture from sticking to your hands.
  7. Shape the popcorn mixture into a corn on the cob shape. Use about a palm-full of popcorn mixture for these mini “cobs of corn.”
  8. Set popcorn cobs on a parchment-lined cookie sheet. Continue until all mixture is gone.
  9. Let cool, about 10 minutes.
  10. Now, take one cob and lay towards the top of a corn husk, slightly wrap and twist the bottom. Tie with twine or string.
  11. This recipe makes 10-12 mini harvest corns.

I thought of Maya Angelou when I watched the inaug I thought of Maya Angelou when I watched the inauguration. She was the poet at Bill Clinton's inauguration, if anyone remembers. This is the link to that reading youtube.com/watch?v=8ecWterxtq0 ("On the Pulse of Morning") She lived not far from me, and when she died, I went to her estate sale. I regretted not going to see her speak while I had the chance and wanted to buy something that belonged to her. We were actually able to go into her house. People were picking through her dishes and rooms full of books, and there were paintings and scuptures she'd been gifted that were selling for thousands of dollars. Her bedroom was closed off, but it felt like we shouldn't be there. For the few who don't know it, this is probably her most famous poem and my favorite: Still I Rise You may write me down in history
With your bitter, twisted lies,
You may trod me in the very dirt
But still, like dust, I’ll rise. Does my sassiness upset you?
Why are you beset with gloom?
’Cause I walk like I’ve got oil wells
Pumping in my living room.
Just like moons and like suns,
With the certainty of tides,
Just like hopes springing high,
Still I’ll rise. Did you want to see me broken?
Bowed head and lowered eyes?
Shoulders falling down like teardrops,
Weakened by my soulful cries? Does my haughtiness offend you?
Don’t you take it awful hard
’Cause I laugh like I’ve got gold mines
Diggin’ in my own backyard. You may shoot me with your words,
You may cut me with your eyes,
You may kill me with your hatefulness,
But still, like air, I’ll rise. Does my sexiness upset you?
Does it come as a surprise
That I dance like I’ve got diamonds
At the meeting of my thighs? Out of the huts of history’s shame
I rise
Up from a past that’s rooted in pain
I rise
I’m a black ocean, leaping and wide,
Welling and swelling I bear in the tide. Leaving behind nights of terror and fear
I rise
Into a daybreak that’s wondrously clear
I rise
Bringing the gifts that my ancestors gave,
I am the dream and the hope of the slave.
I rise
I rise
I rise.
