Here’s an easy recipe for gluten-free banana mini muffins. These are perfect for breakfast or for a snack anytime. Chocolate chips are optional, but I rarely say no to chocolate, so I always put them in. Enjoy!
Ingredients:
1 medium peeled banana
1 tsp baking soda
pinch of salt
1 tbsp vanilla
1 egg
3 tbsp honey
1/2 cup peanut butter
1/2 cup mini chocolate chips (optional)
Directions:
Place all ingredients except chocolate chips in a food processor, and mix well. You can also use a bowl and hand mixer.
Fold in half of the chocolate chips, saving the rest for the top of the muffins.
Pour batter into sprayed mini muffin tins, and then top with the rest of the chocolate chips.
Bake at 400 degrees for seven to nine minutes.
